2 cups shredded zucchini
1/4 cup melted butter
1/2 cup mashed banana
1/2 cup sugar (coconut sugar or honey work well)
2 tsp baking soda
2 cups flour (I like whole wheat spelt flour)
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
pinch of salt
1. Preheat oven to 350 degrees.
2. In bowl, combine zucchini, butter, banana, sugar and eggs. Mix well. Add flour, baking soda, spices and salt. Mix well.
3. Scoop batter into muffin tins.
4. Bake about 20-25 minutes. Use a toothpick to test to see if they are done.
