1 lb organic chicken
3/4 cup shredded coconut
2 tbsp. coconut oil
2 tsp curry seasoning
1 tsp ginger
dash of sea salt
1. Cut up raw chicken into cubes. Once cut, mix in bowl with coconut and spices.
2. Place coconut oil in skillet and turn on medium heat.
3. Place coconut covered chicken into skillet. Cook about 10 minutes.
This can be served with a side of veggies, or added to a salad or soup.
