1/2 onion chopped
1/2 green pepper chopped
2 garlic cloves chopped
2 (15 oz) cans kidney beans, black beans, or pinto beans
1 (15 oz) can or jar of diced tomatoes
2 cups stock
3 tsp chili powder
pinch of salt and pepper
Place all ingredients in crock pot. Cook on low for about 8 hours.
Notes: Feel free to add more veggies such as mushrooms, spinach, sweet potatoes or carrots. Or substitute ground beef for all or half of the beans.
And top with cheese or sour cream.
