Cauliflower Mashed Potatoes


4 servings


1 head cauliflower or 16 oz cauliflower rice

4 tbsp butter

1 tsp onion powder

1 tsp garlic powder

Salt and pepper

Sour cream and cheese for topping (optional


  1. If you are starting with a whole head of cauliflower – wash and chop cauliflower into small chunks.
  2. Heat 2 tbsp butter on skillet.  Add chopped/riced cauliflower. Cook until tender.

  3. Place cauliflower in large bowl.  Add remaining butter and seasoning.

  4. Using an immersion blender or hand mixer, blend until smooth and creamy. You could also mix in a high powered blender.

  5. Top with sour cream, cheese and/or chives.
