1 head cauliflower or 16 oz cauliflower rice
4 tbsp butter
1 tsp onion powder
1 tsp garlic powder
Salt and pepper
Sour cream and cheese for topping (optional
Heat 2 tbsp butter on skillet. Add chopped/riced cauliflower. Cook until tender.
Place cauliflower in large bowl. Add remaining butter and seasoning.
Using an immersion blender or hand mixer, blend until smooth and creamy. You could also mix in a high powered blender.
Top with sour cream, cheese and/or chives.
