6 carrots, peeled
2 Tbsp coconut oil
1/4 cup filtered water
2 tsp honey
1/4 tsp cayenne pepper
salt and pepper to taste
1. Cut whole carrots into 3 parts. Cut each of these sections in half or fourths, depending on the width of the carrots. You want the carrot to have at least one side with a flat surface.
2. Heat the coconut oil on a cast iron skillet.
3. Place the carrot pieces with a flat side down in the skillet. Do not stir the carrots. Cook about 5 minutes, until the bottom is very dark.
4. Add the water, honey, and spices. Cook until the water has cooked off.
