Breakfast Quesadilla

1 serving

Ingredients

2 eggs

1/4 cup spinach (can be dethawed frozen spinach)

salt and pepper

1 premade tortilla

handful shredded cheese ( I like kerrygood dubliner cheese)

2 tsp coconut or avocado oil

Directions

1. Heat 1 tsp oil in skillet.

2.  Whisk eggs, spinach and salt and pepper in small bowl. Pour onto skillet and stir to create scrambled eggs. Remove eggs from the pan.

3.  Add 1 tsp oil to the hot skillet. Lay tortilla in skillet.  Quickly add the inner ingredients to 1/2 of the tortilla.  Layer the cheese, eggs, and a little more cheese.  Using a spatula, fold the tortilla over to create the quesadilla. 

4.  Cook both sides until cheese has melted.



Notes

Add avocado, guacamole, or salsa on the side.
