Blueberry Oatmeal Bake


1 pint blueberries

3 cups oats

1 tsp baking soda

1/3 cup honey or maple syrup

1 1/2 cups milk (almond, cashew or coconut)

2 eggs

3 tablespoons coconut oil or avocado oil

1 tsp vanilla

1/2 tsp salt


1. Preheat oven to 400 degrees.

2.  Combine honey, milk, eggs, oil and vanilla.

3.  Add oats, baking soda, and salt.

4. Fold in blueberries.  

5.  Pour into a 9-inch square baking pan.

6.  Bake about 45 min until golden brown.

Store in airtight container in fridge for up to 3 days.
