Banana Pancakes


Ingredients

serves:  about 4 small pancakes

1 tbsp. coconut oil

1 ripe banana

1 organic egg

1 tbsp. coconut flour

1 tsp cinnamon

1.  Heat coconut oil on cast iron skillet.

2.  Mash banana using a fork or spoon. 

3.  Add egg and coconut flour.  Mix well.

4. Add in cinnamon.

5.  Drop mixture onto hot skillet. Cook about 3 minutes on each side
